Breakfast Burrito
Ingredients
4 large lettuce leaves (such as iceberg or romaine)
4 large eggs
4 slices of cooked bacon or turkey bacon
1/4 cup shredded cheese (cheddar, mozzarella, or your preferred cheese)
1/4 cup diced bell peppers
1/4 cup diced onions
Salt and black pepper to taste
Optional toppings: sliced avocado, salsa, sour cream, hot sauce
Instructions
Heat a non-stick skillet over medium heat and cook the bacon until crispy. Remove the bacon from the skillet and set aside. If using turkey bacon, follow the package instructions for cooking.
In the same skillet, add the diced bell peppers and onions. Sauté for a few minutes until they soften and become slightly caramelized. Remove from the skillet and set aside.
Crack the eggs into a bowl and whisk them together until well beaten. Season with salt and black pepper according to your taste.
Pour the beaten eggs into the skillet over medium heat. Cook, stirring occasionally, until the eggs are scrambled and cooked to your desired doneness.
Lay out the lettuce leaves on a clean surface. Divide the scrambled eggs evenly among the lettuce leaves, placing them in the center.
Crumble the cooked bacon and sprinkle it over the eggs in each lettuce leaf.
Top the eggs and bacon with the sautéed bell peppers and onions.
Sprinkle shredded cheese over each lettuce leaf.
Add any optional toppings you desire, such as sliced avocado, salsa, sour cream, or hot sauce.
Carefully fold the sides of each lettuce leaf over the filling, then roll it up tightly to create a burrito shape.
Serve immediately and enjoy! You can secure each burrito with toothpicks if needed.
