Cabbage Thoran

Ingredients

  • 3 cups finely shredded cabbage

  • 1/2 cup grated coconut (unsweetened)

  • 1/4 cup chopped shallots or red onion

  • 2 green chilies, finely chopped (adjust to taste)

  • 1/2 teaspoon mustard seeds

  • 1/2 teaspoon cumin seeds

  • 1 sprig curry leaves

  • 2 tablespoons coconut oil

  • Salt to taste

  • 1/4 teaspoon turmeric powder

  • 1/4 teaspoon black pepper powder

  • A pinch of asafoetida (hing) (optional)

  • Fresh cilantro leaves for garnishing

Instructions

  1. Prepare the Cabbage:

    • Shred the cabbage finely using a knife or a food processor.

    • Steam the shredded cabbage for about 5 minutes until it's slightly tender. This will help reduce its volume and make it easier to cook later. Drain any excess water.

  2. Prepare the Coconut Mixture:

    • In a grinder or food processor, blend the grated coconut, green chilies, turmeric powder, black pepper powder, and a pinch of salt into a coarse mixture. Don't make it too fine; some texture is desirable.

  3. Cooking:

    • In a large skillet or pan, heat coconut oil over medium heat.

    • Add mustard seeds. When they start to splutter, add cumin seeds and curry leaves. If using asafoetida, add it now.

    • Add chopped shallots or red onion and sauté until they turn translucent.

  4. Combine and Cook:

    • Add the steamed cabbage to the skillet. Mix well with the sautéed shallots and spices.

    • Add the coconut mixture to the skillet and mix thoroughly, evenly coating the cabbage with the coconut mixture.

    • Cook for 5-7 minutes, stirring occasionally, until the flavors meld and the cabbage is fully cooked but still has a slight crunch.

  5. Adjust Seasoning and Garnish:

    • Taste and adjust salt and seasoning according to your preference.

    • Garnish the cabbage thoran with fresh cilantro leaves.

  6. Serve:
