Cauliflower Rice Biryani

Ingredients

For the Cauliflower Rice:

  • 1 medium-sized head of cauliflower

  • 2 tablespoons ghee or olive oil

  • 1/2 teaspoon cumin seeds

  • 1 small onion, finely chopped

  • 2 cloves of garlic, minced

  • 1-inch piece of ginger, grated

  • 1/2 cup mixed vegetables (carrots, peas, green beans, etc.)

  • 1/4 cup chopped bell peppers (optional)

  • 1/4 teaspoon turmeric powder

  • 1/2 teaspoon garam masala

  • Salt to taste

  • Fresh coriander leaves for garnish

For the Biryani Masala:

  • 1 cup plain Greek yogurt

  • 1 tablespoon biryani masala powder (store-bought or homemade)

  • 1/2 teaspoon red chili powder (adjust to your spice preference)

  • 1/2 teaspoon ground coriander

  • 1/2 teaspoon ground cumin

  • Salt to taste

Instructions

  1. Clean the cauliflower and remove the leaves and core. Cut the cauliflower into florets. Using a food processor, pulse the cauliflower florets until they resemble rice-like grains. Be careful not to over-process; you want the cauliflower to have a rice-like texture, not turn into mush. Set the cauliflower rice aside.

  2. In a small bowl, mix all the ingredients for the biryani masala: Greek yogurt, biryani masala powder, red chili powder, ground coriander, ground cumin, and salt. Stir well to combine.

  3. In a large pan or skillet, heat ghee or olive oil over medium heat. Add cumin seeds and let them splutter.

  4. Add the finely chopped onion, minced garlic, and grated ginger to the pan. Sauté until the onions turn translucent and lightly golden.

  5. Add the mixed vegetables and chopped bell peppers (if using) to the pan. Cook for a few minutes until the vegetables are slightly tender.

  6. Lower the heat and add the cauliflower rice to the pan. Mix everything together gently, ensuring the cauliflower rice is well coated with the spices and vegetables.

  7. Pour the prepared biryani masala over the cauliflower rice and stir to combine. Allow the cauliflower rice to cook on low heat for about 5-7 minutes or until it becomes tender. Be careful not to overcook; you want the rice to have a slightly firm texture.

  8. Garnish the Cauliflower Rice Biryani with fresh coriander leaves.

Serve the delicious Cauliflower Rice Biryani with a side of cucumber raita or a mixed green salad for a complete low-carb meal that's both satisfying and nutritious. Enjoy!
