Cauliflower Tater Tots
Ingredients
1 medium cauliflower head
1/2 cup almond flour
1/2 cup grated Parmesan cheese
1 large egg
2 tablespoons chopped fresh parsley
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
Salt and pepper to taste

Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower resembles rice-like texture.
Transfer the cauliflower "rice" to a microwave-safe bowl and cover with a lid or microwave-safe plate. Microwave on high for 5-6 minutes until the cauliflower is tender.
Allow the cauliflower to cool slightly, then place it in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. This step is essential to prevent the tater tots from being too wet.
In a large bowl, combine the squeezed cauliflower, almond flour, grated Parmesan cheese, egg, chopped parsley, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
Take about 1 tablespoon of the mixture at a time and shape it into small tots. Place them on the prepared baking sheet, leaving a little space between each tot.
Lightly spray the tots with cooking spray to help them crisp up in the oven.
Bake in the preheated oven for 20-25 minutes, or until the tots are golden brown and crispy. You can flip them halfway through baking to ensure even browning.
Remove the cauliflower tater tots from the oven and let them cool for a few minutes before serving. They can be enjoyed on their own or served with a low-carb dipping sauce like sugar-free ketchup or ranch dressing.
