Coconut Cream Pie
Crust Ingredients
1 cup almond flour
1/4 cup unsweetened shredded coconut
3 tablespoons melted butter
1 tablespoon erythritol or your preferred low-carb sweetener
1/2 teaspoon vanilla extract
Filling Ingredients
1 can (14 oz) full-fat coconut milk (refrigerated overnight)
1/2 cup unsweetened shredded coconut
3 large egg yolks
1/4 cup erythritol or your preferred low-carb sweetener
1 teaspoon vanilla extract
1 tablespoon coconut flour
Topping Ingredients
1 cup heavy whipping cream
1 tablespoon erythritol or your preferred low-carb sweetener
1/2 teaspoon vanilla extract
Additional toasted coconut for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C).
For the crust, mix almond flour, shredded coconut, melted butter, erythritol, and vanilla extract in a bowl until well combined. Press the mixture into a 9-inch pie pan to form the crust. Bake in the preheated oven for 10-12 minutes, or until it turns golden brown. Remove from the oven and let it cool completely.
For the filling, take the chilled can of coconut milk and carefully scoop out the solid coconut cream that has risen to the top. Save the remaining coconut water for other uses (like smoothies).
In a saucepan, whisk together the coconut cream, shredded coconut, egg yolks, erythritol, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
Remove the saucepan from the heat and stir in the coconut flour. Let the filling cool slightly.
Pour the coconut cream filling into the cooled crust and smooth the top with a spatula. Refrigerate the pie for at least 2-3 hours or until it's set.
For the topping, whip the heavy whipping cream, erythritol, and vanilla extract until stiff peaks form.
Spread the whipped cream over the chilled pie filling.
Optionally, you can garnish the pie with additional toasted shredded coconut.
