Paneer Tikka Skewers

Ingredients

  • 1 block of paneer, cut into 1-inch cubes

  • 1 medium-sized bell pepper (any color), cut into chunks

  • 1 medium-sized red onion, cut into chunks

  • 1 small zucchini, sliced into rounds

  • 1 cup plain Greek yogurt

  • 2 tablespoons lemon juice

  • 1 tablespoon ginger-garlic paste (or minced ginger and garlic)

  • 1 tablespoon tandoori masala powder

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1/2 teaspoon turmeric powder

  • 1/4 teaspoon cayenne pepper (adjust to your spice preference)

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • Wooden skewers (soaked in water for 30 minutes to prevent burning)

Instructions

  1. In a bowl, mix the Greek yogurt, lemon juice, ginger-garlic paste, tandoori masala powder, ground cumin, ground coriander, turmeric powder, cayenne pepper, salt, and pepper to create the marinade.

  2. Add the paneer cubes to the marinade and gently toss them until they are well coated. Cover the bowl with plastic wrap or a lid and let it marinate in the refrigerator for at least 1 hour (or preferably longer) to allow the flavors to infuse.

  3. While the paneer is marinating, prepare the vegetables. Thread the marinated paneer, bell pepper chunks, red onion chunks, and zucchini rounds alternately onto the soaked wooden skewers.

  4. Preheat your grill or a grill pan over medium-high heat.

  5. Brush the grill or grill pan with olive oil to prevent sticking.

  6. Place the paneer skewers on the grill or grill pan and cook for about 2-3 minutes on each side, or until the paneer gets grill marks and becomes slightly charred.

  7. While grilling, you can brush the paneer tikka skewers with a little more olive oil or ghee for added flavor and moisture.

  8. Once the paneer and vegetables are cooked to your desired level of doneness, remove the skewers from the grill.

  9. Serve the Paneer Tikka Skewers hot with a side of mint chutney or a squeeze of fresh lemon juice.
