Roasted Broccoli

Ingredients

  • 1 large head of broccoli

  • 2 tablespoons olive oil

  • 2 cloves of garlic, minced

  • Salt and pepper to taste

  • Optional toppings: grated Parmesan cheese, lemon zest, red pepper flakes

Instructions

  • Preheat your oven to 425°F (220°C).

  • Wash the broccoli thoroughly and pat it dry. Trim off any tough stems and cut the broccoli into florets.

  • In a large bowl, combine the broccoli florets, olive oil, minced garlic, salt, and pepper. Toss well to coat the broccoli evenly with the oil and seasonings.

  • Spread the seasoned broccoli florets in a single layer on a baking sheet lined with parchment paper. Make sure they are not overcrowded to ensure even roasting.

  • Place the baking sheet in the preheated oven and roast for about 15-20 minutes, or until the broccoli is tender and slightly crispy on the edges. Check on the broccoli halfway through and give it a stir for even cooking.

  • Once the broccoli is roasted to your desired level of crispness, remove it from the oven and transfer it to a serving dish.

  • Optional: Sprinkle the roasted broccoli with grated Parmesan cheese, lemon zest, or red pepper flakes for added flavor and garnish.

  • Serve the low-carb roasted broccoli as a side dish or as part of a meal. It pairs well with grilled meats, or roasted chicken, or can be enjoyed on its own.
