Roasted Broccoli
Ingredients
1 large head of broccoli
2 tablespoons olive oil
2 cloves of garlic, minced
Salt and pepper to taste
Optional toppings: grated Parmesan cheese, lemon zest, red pepper flakes
Instructions
Preheat your oven to 425°F (220°C).
Wash the broccoli thoroughly and pat it dry. Trim off any tough stems and cut the broccoli into florets.
In a large bowl, combine the broccoli florets, olive oil, minced garlic, salt, and pepper. Toss well to coat the broccoli evenly with the oil and seasonings.
Spread the seasoned broccoli florets in a single layer on a baking sheet lined with parchment paper. Make sure they are not overcrowded to ensure even roasting.
Place the baking sheet in the preheated oven and roast for about 15-20 minutes, or until the broccoli is tender and slightly crispy on the edges. Check on the broccoli halfway through and give it a stir for even cooking.
Once the broccoli is roasted to your desired level of crispness, remove it from the oven and transfer it to a serving dish.
Optional: Sprinkle the roasted broccoli with grated Parmesan cheese, lemon zest, or red pepper flakes for added flavor and garnish.
Serve the low-carb roasted broccoli as a side dish or as part of a meal. It pairs well with grilled meats, or roasted chicken, or can be enjoyed on its own.
