Low-Carb Roasted Chicken
Ingredients
1 whole chicken (about 4-5 pounds)
2 tablespoons olive oil
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon dried rosemary
Instructions
Preheat your oven to 425°F (220°C).
Clean the chicken thoroughly, removing any giblets or excess fat. Pat it dry with paper towels.
In a small bowl, combine the salt, black pepper, garlic powder, paprika, dried thyme, and dried rosemary.
Rub the olive oil all over the chicken, making sure to coat it evenly.
Sprinkle the spice mixture over the chicken, massaging it into the skin to ensure even distribution.
Place the chicken on a roasting rack in a roasting pan, breast-side up.
Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer.
Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
Carve the chicken into serving pieces and serve hot.
