Low-Carb Roasted Chicken

Ingredients

  • 1 whole chicken (about 4-5 pounds)

  • 2 tablespoons olive oil

  • 2 teaspoons salt

  • 1 teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

Instructions

  • Preheat your oven to 425°F (220°C).

  • Clean the chicken thoroughly, removing any giblets or excess fat. Pat it dry with paper towels.

  • In a small bowl, combine the salt, black pepper, garlic powder, paprika, dried thyme, and dried rosemary.

  • Rub the olive oil all over the chicken, making sure to coat it evenly.

  • Sprinkle the spice mixture over the chicken, massaging it into the skin to ensure even distribution.

  • Place the chicken on a roasting rack in a roasting pan, breast-side up.

  • Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer.

  • Remove the chicken from the oven and let it rest for 10-15 minutes before carving.

  • Carve the chicken into serving pieces and serve hot.
