Shrimp with Vegetables

Ingredients

  • 1 pound (450g) shrimp, peeled and deveined

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 onion, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 1 zucchini, sliced

  • 1 cup broccoli florets

  • 1 cup snap peas, trimmed

  • 2 tablespoons soy sauce (check whether it has sugar)

  • 1 tablespoon oyster sauce (check whether it has sugar)

  • Salt and pepper to taste

  • Optional garnish: chopped fresh cilantro or green onions

Instructions

  • In a small bowl, whisk together the soy sauce and oyster sauce. Set aside.

  • Heat the olive oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  • Add the sliced onion, red bell pepper, and yellow bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables start to soften.

  • Add the zucchini, broccoli florets, and snap peas to the skillet. Continue to stir-fry for an additional 3-4 minutes until the vegetables are crisp-tender.

  • Push the vegetables to one side of the skillet and add the shrimp to the other side. Cook the shrimp for 2-3 minutes per side until they turn pink and opaque.

  • Stir the soy sauce mixture and pour it over the shrimp and vegetables. Toss everything together until well coated. Cook for an additional 1-2 minutes until the sauce thickens.

  • Season with salt and pepper to taste. If desired, garnish with chopped fresh cilantro or green onions.

  • Remove from heat and serve the shrimp with vegetables immediately.
