Tofu Matar

Ingredients

  • 1 block (14 oz) firm tofu, pressed and cubed

  • 1 cup frozen green peas

  • 1 medium onion, finely chopped

  • 2 tomatoes, pureed

  • 2-3 cloves of garlic, minced

  • 1-inch piece of ginger, minced

  • 2 green chilies, slit (adjust to taste)

  • 1/2 teaspoon cumin seeds

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon ground coriander

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon garam masala

  • 1/4 teaspoon red chili powder (adjust to taste)

  • 2 tablespoons olive oil or ghee

  • Salt to taste

  • Fresh cilantro leaves for garnishing

Instructions

  1. Prepare the Tofu:

    • Press the tofu to remove excess moisture. Cut it into cubes and lightly season with a pinch of turmeric and salt. This will add flavor to the tofu.

    • Heat a non-stick skillet and lightly sauté the tofu cubes until they turn golden on the edges. Set them aside.

  2. Sauté Aromatics:

    • In a large skillet, heat olive oil or ghee over medium heat.

    • Add cumin seeds and let them splutter.

    • Add minced garlic, ginger, and slit green chilies. Sauté for a minute until aromatic.

  3. Add Onions and Tomatoes:

    • Add the finely chopped onion and sauté until they turn translucent.

    • Add tomato puree and cook until the oil starts to separate from the mixture. This will take around 5-7 minutes.

  4. Spices and Cooking:

    • Add ground coriander, ground cumin, turmeric powder, red chili powder, and salt. Mix well and cook for a couple of minutes to allow the spices to bloom.

  5. Add Tofu and Peas:

    • Add the sautéed tofu cubes and frozen green peas to the skillet. Mix gently to coat them with the spice mixture.

  6. Simmer:

    • Add a splash of water to create a bit of gravy. Cover the skillet and let the mixture simmer for about 5-7 minutes, allowing the flavors to meld and the peas to cook.

  7. Finish and Garnish:

    • Sprinkle garam masala over the dish and gently mix.

    • Garnish with fresh cilantro leaves.

  8. Serve:

    • Low-carb tofu matar is ready to be served. It's a perfect main course that can be paired with cauliflower rice, zucchini noodles, or enjoyed on its own.
