Tofu Matar
Ingredients
1 block (14 oz) firm tofu, pressed and cubed
1 cup frozen green peas
1 medium onion, finely chopped
2 tomatoes, pureed
2-3 cloves of garlic, minced
1-inch piece of ginger, minced
2 green chilies, slit (adjust to taste)
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon garam masala
1/4 teaspoon red chili powder (adjust to taste)
2 tablespoons olive oil or ghee
Salt to taste
Fresh cilantro leaves for garnishing
Instructions
Prepare the Tofu:
Press the tofu to remove excess moisture. Cut it into cubes and lightly season with a pinch of turmeric and salt. This will add flavor to the tofu.
Heat a non-stick skillet and lightly sauté the tofu cubes until they turn golden on the edges. Set them aside.
Sauté Aromatics:
In a large skillet, heat olive oil or ghee over medium heat.
Add cumin seeds and let them splutter.
Add minced garlic, ginger, and slit green chilies. Sauté for a minute until aromatic.
Add Onions and Tomatoes:
Add the finely chopped onion and sauté until they turn translucent.
Add tomato puree and cook until the oil starts to separate from the mixture. This will take around 5-7 minutes.
Spices and Cooking:
Add ground coriander, ground cumin, turmeric powder, red chili powder, and salt. Mix well and cook for a couple of minutes to allow the spices to bloom.
Add Tofu and Peas:
Add the sautéed tofu cubes and frozen green peas to the skillet. Mix gently to coat them with the spice mixture.
Simmer:
Add a splash of water to create a bit of gravy. Cover the skillet and let the mixture simmer for about 5-7 minutes, allowing the flavors to meld and the peas to cook.
Finish and Garnish:
Sprinkle garam masala over the dish and gently mix.
Garnish with fresh cilantro leaves.
Serve:
Low-carb tofu matar is ready to be served. It's a perfect main course that can be paired with cauliflower rice, zucchini noodles, or enjoyed on its own.
